Lighthouse Rolls

½ cup warm water
1 tsp. White sugar
1 tbs. Active dry yeast
1½ cup milk
¼ cup shortening
¼ cup sugar
2 tsp. Salt
1 tsp. Thyme
1 tsp. Basil
1 tsp. Onion powder
2 eggs
3¾ cups flour

Directions:
In large bowl, dissolve ½ tsp. sugar in the ½ cup water. Sprinkle yeast in and let stand for 10 minutes. Then stir well. Combine milk, ¼ cup sugar, shortening, salt, and thyme, basil, and onion powder in saucepan. Heat to lukewarm and the shortening is melted. Stir well and let cool if too warm. Beat egg and stir into the milk mixture. Add milk mixture and 2¾ cups of the flour to yeast mix. Beat with electric mixer until smooth, and then gradually stir in remaining cup of flour. Cover with towel and let rise until double (1 hour). Stir down dough and let stand for 10 minutes. Fill greased muffin tins one-half full and let rise until doubled (30 to 45 minutes). Bake in preheated oven 375°F for 20 - 25 minutes. Remove from tins immediately and brush tops with butter. Serve warm with fish or seafood chowder.
