Lemon Tea Bread with Blueberries
¼ cup + 2 tbs. Butter or margarine, softened
1 cup sugar
2 eggs
1½ cups plain flour
1 tsp baking powder
pinch salt
½ cup milk
1 heaping tbs. Grated lemon peel
1 cup fresh blueberry
Directions:
Cream butter. Add sugar until well blended, and then add eggs. Begin adding flour, baking powder and salt. Add the milk and rest of the flour. Stir in lemon peel and blueberries. Bake in greased loaf pan for 55 minutes at 350°F.
Glaze:
1/3 cup sugar
3 tbs. Lemon juice
2 tsp grated lemon peel
Directions:
Combine sugar, lemon juice and peel in a saucepan and heat until sugar dissolves. Poke holes in top of bakes loaf and pour over warm bread.
