Lemon Soufflé
1 lemon
1 small container plain yogurt
4 eggs
5 tbs. Icing sugar
1 tbs. Flour
1 tbs. Butter
1 tbs. Fine granulated sugar
Directions:
Wash the lemon. Grate the zest and squeeze the juice. Combine the yogurt, flour, lemon juice and zest in a bowl then finally blend in the egg yolks. Beat the egg whites to stiff peaks. Blend in the icing sugar. Gently fold the beaten eggs whites into the yogurt-lemon mixture. Fill buttered sugared ramekins two-thirds full with the mixture. Bake in a 350°F oven for 15-20 minutes. Sprinkle with icing sugar and serve immediately.
