Kentucky Bourbon Bread

2/3 cup raisins
1/3 cup Kentucky bourbon
½ cup + 2 tbs. butter or margarine (softened)
1½ cups sugar
6 eggs
2¼ cups flour
1½ tsp vanilla extract
1 cups coarsely chopped pecans

Directions:
Soak raisins in bourbon for 1 - 2 hours. Drain, reserving bourbon Add more bourbon to make 1/3 cup. Generously grease two 9 x 5 x 3 loaf pans and line bottom with parchment paper. Preheat oven to 350°F. Separate eggs.
In a bowl cream butter and a ½ cup sugar until fluffy.
Add egg yolks, one at a time beating well after each addition. Add flour in thirds alternating with bourbon, mix until well blended. Stir in raisins, vanilla, and pecans. In another bowl (be sure to use clean beaters), beat egg whites until soft peaks form. Gradually beat in remaining cup of sugar and beat until stiff. Gently fold egg whites into batter. Pour batter into prepared loaf pans and bake for 1 hours or until done. Cool 10 minutes, then remove from pan to cooling rack. Cool completely.
