Jewish Apple Cake
4 eggs
2 cups sugar
1 cup oil
2 cups self rising flour
4 tsp. Cinnamon
2 tsp. Vanilla
3 apples (peeled and sliced)
1 cup chopped walnuts
Directions:
Beat eggs and gradually add sugar and oil. In a separate bowl sift flour and cinnamon. Gradually add to the dry ingredients, add vanilla, and fold in apples and nuts. Bake in a 9 inch tube pan at 350°F for one hour.
