Honey Peach Upside-Down Cake

½ cup liquid honey
¼ cup melted butter
¼ cup pecan halves (optional)
28 oz. can sliced peaches
½ cup soft shortening
½ cup sugar
¼ cup liquid honey
1 egg
1½ cups sifted all-purpose flour
1 tsp. Baking powder
¼ tsp. Baking soda
½ tsp. Salt
½ tsp. Nutmeg
½ cup milk
Peach Sauce (recipe below)

Directions:
Pre heat oven to 350°F and have a 9 inch square cake pan. Stir ½ cup honey, butter and pecan halves together in the cake pan. Drain the peaches thoroughly, saving the juice for the sauce. Lay the peaches slices on top of the honey mixture. Beat shortening, sugar, and ¼ cup honey and egg together until fluffy. Sift flour, baking powder, baking soda, salt and nutmeg together. Add to shortening the sugar mixture alternately with the milk. Beginning and ending with the dry ingredients. Stir just until blended after each addition. Spoon over peaches in cake pan and spread carefully. Bake 55 to 60 minutes or until center springs back when touched lightly. Invert on serving plate and let pan stand over cake for a minute, so all peach mixture drops out. Serve warm cut in squares and topped with a little Peach Sauce.

Peach Sauce
Peach juice (drained from can used for cake)
2 tbs. Cornstarch
2 tsp. Lemon juice

Directions:
Measure peach juice and add enough water to make 2 cups. Put ¼ cup of this juice in a small dish and add cornstarch. Stir until smooth. Bring remaining peach juice and lemon juice to a boil. Stir in cornstarch mixture gradually. Bring back to a boil stirring 1 minute. Serve warm.
