Herbed Tomatoes, Chicken & Rice
This low calorie, lower fat meal provides two servings of veggies
Prep Time: 5 min Ready In: 30 min Serves: 4

¼ cup Kraft Calorie-Wise Italian Dressing
4 small boneless skinless chicken breast halves (about 1 lb.)
2 cloves garlic, minced
1 can (28 fl oz) Aylmer Diced Tomatoes, undrained
1 cup water
1½ cups Minute Rice Brand Rice, uncooked
1 cup Part Skim Mozzarella Shredded Cheese
1 medium tomato, chopped
2 tbs. Chopped cilantro

Directions:
Heat dressing in large frying pan on medium heat. Add chicken and garlic; cover. Cook 5 min. on each side or until chicken is browned. Remove from pan; set aside.
Add canned tomatoes and water to pan. Stir in rice; bring to boil. Reduce heat to low; simmer, uncovered, 10 min. Return chicken to pan. Sprinkle with cheese; cover.
Cook on low heat 5 min. Top with tomato and cilantro.

Special Extra:
Add 2 tsp. dried rosemary, crushed, or dried thyme with the canned tomatoes.
